Days 1–3 · Xi’an
One of the great Chinese cities on its own terms. The old city walls are intact: 13km by bike at dusk. The Muslim Quarter is where the Silk Road begins in practice: flatbreads, lamb skewers, pomegranate juice.
The Terracotta Warriors need a full day and an early start.
What to Eat in Xi’an
Rou Jia Mo (肉夹馍) — Called the Chinese hamburger. Slow-braised lamb or pork, chopped fine, piled into a charred sesame flatbread.
Biangbiang Noodles (biang biang面) — Belt-width hand-torn wheat noodles, served with chili oil, garlic, and black vinegar.
